Dress-up your greens: veggies with ultimate flavor

This is the post your salad has been waiting for. No one really jumps at the chance to eat a bowl of lettuce... until now.

This is our Mediterranean Salad loaded with all the goodies. Oregano Diced Chicken, red onions, marinated Kalamata Olives, Pepperoncini Peppers, Parmigiano-Reggiano, grape tomatoes, croutons, and a Roasted Red Pepper Dressing to literally top it all off. Who said salads had to be boring?

We will even help you out by giving you the Roasted Red Pepper Vinaigrette recipe. This salad dressing is naturally sweet, so there is no need for additional sweeteners.

  • 2 sweet red peppers (freshly Roasted or jarred)

  • 1 shallot, chopped

  • 1/2 cup loosely packed basil leaves

  • 1 clove garlic, smashed

  • 6 Tbsp white balsamic vinegar

  • 3/4 tsp sea salt

  • 1/8 tsp freshly ground black pepper

  • 1 cup extra virgin olive oil

Blend it all in a blender or food processor, then let it sit overnight in the refrigerator. Shake well and enjoy your new lease on salad life.
